braised red cabbage

INGREDIENTS
- 1 tablespoon butter
- 1 shallot, sliced
- 1/2 red small cabbage, sliced
- 1 teaspoon mustard seeds
- 1 teaspoon caraway seeds
- 1/2 teaspoon chili flakes or a small dried chili minced (optional)
- Salt and pepper to taste (about half teaspoon each)
- 1/3 cup apple cider vinegar
- 1 tablespoon brown sugar
TIPS and thoughts
- For some kick, add 1/2 teaspoon of chile flakes or a small minced dried chile of your choice. I love morita chile. They have a great richness and complexity of heat, smoke and fruitiness.
STEPS
- Melt butter in a medium pan over medium heat.
- Slice shallot and add to pan.
- Take half a cabbage head and cut it in half lengthwise.
- Thinly slice to make ribbons.
- Add cabbage to pan.
- Add mustard seeds, caraway seeds, chili, salt and pepper.
- Let cook for about 8-10 minutes, stirring occasionally.
- Reduce heat to low.
- Stir in cider vinegar and brown sugar.
- Cook for another 10 minutes.
