braised red cabbage

INGREDIENTS
  • 1 tablespoon butter
  • 1 shallot, sliced
  • 1/2 red small cabbage, sliced
  • 1 teaspoon mustard seeds
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon chili flakes or a small dried chili minced (optional)
  • Salt and pepper to taste (about half teaspoon each)
  • 1/3 cup apple cider vinegar
  • 1 tablespoon brown sugar
 
 
TIPS and thoughts
  • For some kick, add 1/2 teaspoon of chile flakes or a small minced dried chile of your choice. I love morita chile. They have a great richness and complexity of heat, smoke and fruitiness.
STEPS
  1. Melt butter in a medium pan over medium heat.
  2. Slice shallot and add to pan.
  3. Take half a cabbage head and cut it in half lengthwise. 
  4. Thinly slice to make ribbons. 
  5. Add cabbage to pan. 
  6. Add mustard seeds, caraway seeds, chili, salt and pepper.
  7. Let cook for about 8-10 minutes, stirring occasionally.
  8. Reduce heat to low.
  9. Stir in cider vinegar and brown sugar. 
  10. Cook for another 10 minutes.
