Caramel Sauce
Prep time: 20 minutes
Yield: 1 cup
Can be frozen
INGREDIENTS
- 1/2 cup sugar
- 2/3 cup 35% cream
- 2 tablespoons salted butter

- Hint of flavour: add a teaspoon of pure vanilla extract or rum.
- Perfect sauce on ice cream, apple crumble, cakes and profiteroles.
STEPS
- In a saucepan, melt sugar over low-medium heat.
- Do not stir.
- You can swirl the pan for redistributing sugar.
- Heat cream in the microwave and set aside.
- Should take less than a minute.
- Get butter ready,
- Cook sugar until it melted and turns amber.
- Keep an eye on it. As soon as most the sugar is melted, give the pan a swirl to melt the rest of the sugar.
- Don’t let it get too dark, you want a light/medium brown.
- Reduce heat.
- Carefully add cream.
- Sugar will harden as you add cream. At first, the cream will bubble and get very hot.
- With a wooden spoon or silicone spatula, stir constantly and add butter.
- Keep stirring until sugar is dissolved.
- Should take 4 to 5 minutes.
- Sugar may not fully dissolve.
- Strain sauce into a container.
