Cheddar and Chive sconeS

INGREDIENTS
- 2 1/4 cup all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon piment d’Espelette or cayenne pepper
- 3/4 teaspoon salt
- 1/3 cup cold butter
- 1 cup extra old cheddar, shredded
- 3/4 cup milk
- 1 egg
- 2 tablespoons chives, minced
- 2 teaspoons honey
TIPS and Thoughts
- Honey, especially the unfiltered and non-pasteurize kind tends to crystallize. Simply heat it up in the microwave a few seconds (7 to 10 seconds) to melt. You’ll tend be able to brush it on the scones.
STEPS
- Preheat over to 425° F.
- In a large mixing bowl, combine:
- flour
- baking soda
- baking powder
- piment d’Espelette
- salt
- Add butter in flour mix and break to pea size with your fingers.
- Shred cheddar and add to mix.
- Mince chives and add to mix.
- Add milk and egg.
- Combined well and form a ball.
- On a flat surface, like a cutting board, flatten ball to make a large disk about 2 to 3 cm thick.
- Cut into 8 pieces:
- For triangles cut using a sharp knife
- For circles use a ring mold or glass. You may have to reshape dough to make all your circles
- Place on a lined cookie sheet about 2 to 3 cm apart.
- Melt honey in microwave for a few seconds and brush on top of each scone.
- Bake until golden, about 10 to 12 minutes.
