INGREDIENTS
Salad
- Quarter savoy cabbage
- 1 apple, julienned
- 1 carrot, julienned
- 1 jalapeño, sliced
- 2 or 3 springs cilantro, chopped
- 1 lemon, juiced
- Handful pine nuts
Vinaigrette
- Juice 1 lemon
- 3 tablespoon olive oil
- 1 teaspoon caraway seeds
- 1/2 teaspoon sea salt
- Ground pepper to taste
- 1 teaspoon honey
TIPS and thoughts
- Keep an eye on your nuts. They burn easily.
STEPS
Salad
- Heat oven to 375 and place a handful of pine nuts to roast. Should take about 5 minutes.
- Remove any tattered or bruised outer leaves from cabbage.
- Cut the cabbage into quarters, and then cut out the core.
- Slice one quarter into thin shreds.
- Place in a large bowl.
- Thinly slice carrot and add to cabbage
- Juice one lemon and place in a medium bowl.
- Thinly slice apple and place in lemon juice to coat.
- Slice jalapeño and add to mix.
- Add apples and lemon juice to salad
Vinaigrette
- Mix all ingredients together and pour over salad.
