Pickled red onion

INGREDIENTS
  • Half red onion
  • 1 1/2 tablespoon sugar
  • 1 teaspoon salt
  • 2 bay leaves
  • 8 Tasmanian pepper berries (or Juniper berries)
  • White vinegar
TIPS and Thoughts
  • Pickling became very trendy in the past years. I used to wonder what the fuss was about, so I made some pickled onion. Then I wondered why I did not make them earlier. The onion looses its harshness. They stay crunchy and get a very nice tang. For a while, we ate them on everything.

 

  • Keeps in the fridge for a few months.

Perfect topping condiment for:

  • Salads
  • Burgers
  • Tacos
STEPS
  1. Slice onion
  2. Place in a glass jar with sugar, salt, bay and berries.
  3. Fill jar with vinegar to cover onions.
  4. Cover with lid and give it a good shake to dissolve salt and sugar.
  5. Refrigerate.
