INGREDIENTS
- Half red onion
- 1 1/2 tablespoon sugar
- 1 teaspoon salt
- 2 bay leaves
- 8 Tasmanian pepper berries (or Juniper berries)
- White vinegar

- Pickling became very trendy in the past years. I used to wonder what the fuss was about, so I made some pickled onion. Then I wondered why I did not make them earlier. The onion looses its harshness. They stay crunchy and get a very nice tang. For a while, we ate them on everything.
- Keeps in the fridge for a few months.
Perfect topping condiment for:
- Salads
- Burgers
- Tacos
STEPS
- Slice onion
- Place in a glass jar with sugar, salt, bay and berries.
- Fill jar with vinegar to cover onions.
- Cover with lid and give it a good shake to dissolve salt and sugar.
- Refrigerate.
