White chocolate and cherry scones

INGREDIENTS
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup cold butter
- 1/4 cup sugar
- 1 cup plain yogurt
- 1 egg
- 1/2 cup dried cherries
- 1/2 cup white chocolate
TIPS
- For easy chocolate chop: place chocolate slab on a cutting board. Using the tip of a sharp knife gently press onto chocolate. It will break pieces without effort or scattering chocolate pieces.
- I like to use tart cherries for contrast with the sweet chocolate.
STEPS
- Preheat oven at 400 F.
- In a medium bowl, mix:
- flour
- baking powder
- baking soda
- salt
- Add cold butter and break down to pea size with fingers.
- Stir in sugar.
- Stir in egg and yogurt.
- Chop white chocolate into chucks and add to mix.
- Rough chop cherries and combine to mix.
- Place on a lightly floured surface and pat into a circle about 2 to 3 cm thick.
- Cut into 8 pieces:
- For triangles cut using a sharp knife
- For circles use a ring mold or glass. You may have to reshape dough to make all your circles
- Place on a lined cookie sheet about 2 to 3 cm apart.
- Bake until golden, about 10 to 12 minutes.
